Hidden away in an industrial area of West Eugene, there is a commissary kitchen. Ben Maude and Ginger McCabe spend many hours there working on Chili Royale, their chili crisp oil business.
But a few days a month, Maude and McCabe take an afternoon off from bottling product and put on their sandwich-making hats. Their untraditional takes on sandwiches have drawn foodie crowds from all over Lane County who come to feast on meatball subs and bahn mi and spend time with friends…
