Summer is calling for fresh empanadas and juices at Yellow Crunch, as the Colombian eatery relocates just a short distance from its original space into a larger home at The Exchange in downtown Fort Collins.
Owned by couple Viviana and Eric Presley, the restaurant serves traditional Colombian dishes and small eats, including buñuelos, tamales and breakfast items like huevos pericos. It is expanding due to limited seating at its current location at 234 N. College Ave., which could accommodate only about 12 guests, according to Eric Presley.
The new space, located at 216 N. College Ave., Suite 130 and previously home to Crooked Stave Artisan Beer Project taproom and FoCo Beer Collective, will expand capacity to around 100 guests…
