Springfield-Greene County Health Department restaurant inspectors found frog legs thawing in a dirty sink this week, according to an April 24 report.
Inspectors visited Diamond Head, 1225 E. Hines St. in Republic, on April 24, according to the report. There, they found “frog legs being thawed directly in the soiled” sink, which is a priority violation that was corrected on site by discarding the frog legs.
The restaurant also had one non-priority violation: Salmon being offered in ready-to-eat form for sushi, but nothing that showed the fish was safe for consumption raw. For those types of fish, documentation is required to show that fish had been frozen for an appropriate amount of time to destroy parasites or it was aqua-cultured and fed a parasite-free feed…
