New Mexican eatery with Salt Lick BBQ ties take shape in San Antonio

The chef behind San Antonio restaurants like Los Azulejos and PM Tacos & Cocktails is partnering with the owner of a legendary Texas barbecue mainstay to create a new Mexican restaurant near the Dominion.

On Thursday, April 30, MySA met with chef Diego Gonzalez at his upcoming restaurant, Sombra, which is still in the early stages of permitting and construction. Gonzalez didn’t hold back when speaking about Sombra and how he teamed up with Scott Roberts, the owner of Driftwood-founded Salt Lick BBQ, to create the upcoming restaurant.

“My motto is take the best of Mexico, for example, Culiacan, Sinaloa and Veracruz, [and] I make it like a like a fusion with all the different regions,” Gonzalez said.

Sombra’s menu is expected to feature traditional Mexican dishes from various regions and catering to the Hill Country setting that surrounds the restaurant at Dominion Crossing, a retail strip along I-10. Gonzalez said he’s been working on some ideas for dishes for Sombra, including duck carnitas, lobster tamales with mole, pozole with mussels and a burger topped with huitlacoche and Cotija cheese…
