When the 40-year-old business’ owners, Barb and R Jay Gruenwald, retired, Wisconsin lost what was likely its only organic tofu manufacturer. The brand could be found in some Milwaukee and Madison grocery stores and at Beans & Barley, a now-closed Milwaukee vegetarian cafe and grocery store.
