Cupcakes and Cuban Cuisine Come Together

The story of Elvira’s Cuban Cuisine is tied into cupcakes. It turns out that the owner-operator/Chef of Elvira’s is a close friend of the folks that operate Mystic Moon Bakery. Mystic Moon was once known as The Cupcake Gypsies.

The Cupcake Gypsies had a great food truck (they still do) and then opened up a brick-and-mortar location in Downtown Loveland. That didn’t work out, and they moved operations to Fort Collins and changed their name to Mystic Moon Bakery.
