A new family-run Italian restaurant, Maida Trattoria, is preparing to open its doors in the heart of Old Town Fort Collins at 100 North College Avenue. According to 99.9 The Point, the brains behind the business are a well-known local couple who have been in the NoCo hospitality scene for decades.
McCabe and Marli Callahan, known for operating the coffee shop and bar Mugs, are the owners of the restaurant. They named it Maida Trattoria after a small town in southern Italy where the family has ancestral roots, its website explains. Kai Churman, Marli’s sister, will be general manager, and Executive Chef Andy Lipps will run the kitchen.
The restaurant promises a menu of house-made pasta, flatbread pizzas, seasonal salads, delicious soups, and tapas/small plates. Info on what to expect for the brunch menu has not been released…
