Chef Jake Morgan has quietly parked a sleek new Mexican-inspired food trailer in Fort Worth’s Near Southside, and the secret is clearly out. Flama Blanca mixes fine-dining technique with street-food staples like tacos and a chorizo burger that has already turned first-time visitors into regulars. The trailer is Morgan’s first solo project after nearly two decades in high-end kitchens.
According to Texas Is Life, the star of the menu is a 100% chorizo patty reworked as a chorizo burger stacked with crispy mozzarella, bacon, tequila-caramelized onions and matcha aioli. It shares space on the menu with tacos built around achiote-marinated chicken, house-spiced steak, carnitas and al pastor, plus an elote salad and a house-made churro. A soy-based al pastor taco gives vegetarian and vegan diners a way into the party.
From Plank To A Trailer
Fort Worth Magazine reports that Morgan is a Tarrant County native who sharpened his skills at Truluck’s, then moved into leadership roles with Fox Restaurant Group and Flagship Restaurant Group before serving as executive chef at Plank Provisions. “What we’re trying to do here is bring something that’s new to the area, new to Fort Worth … something that excites people,” Morgan told the magazine, explaining his decision to test his concept in a compact, mobile setup.
