Nepalese and Indian Fusion Concept Debuting in Gainesville

GAINESVILLE, FL – Himalayan Bowl & Juice Bar Nepalese & Indian Kitchen is targeting a late February or first week of March opening inside City Food Hall at 150 NW 13th St, Gainesville, FL 32603. Owner Suraj Maharjan told Business Debut the restaurant will focus on Nepalese and Indian fusion served in a fast-casual bowl format.

What to Expect

Himalayan Bowl & Juice Bar will operate as a fast-casual concept where guests choose their protein and receive a composed bowl built around the restaurant’s signature combinations. Maharjan said the menu blends popular Nepalese and Indian dishes into new offerings rather than presenting a traditional menu from either cuisine alone.

Guests can expect options such as chicken, tofu, or lamb served over rice with sides like shallots and pickles. The restaurant will be located within City Food Hall in downtown Gainesville, offering shared seating within the food hall space.

Menu and Vision

A core example of the fusion concept combines Nepal’s popular momo with Indian butter chicken tikka masala flavors, creating a composed bowl. “We mix together and we make like one new dish,” Maharjan told Business Debut.

While traditional recipes inspire the menu, Maharjan said flavors will be adjusted for a broader audience. “It’s a spicy but we open in U.S., that’s why we make like a U.S. taste, not too spicy. It’s like a rich flavor,” he told Business Debut…
