Michigan Native Erika Brigham Appointed as Executive Chef of MDRD at Downtown’s Amway Grand Plaza

The Amway Grand Plaza, Curio Collection, has appointed Erika Brigham as the Executive Chef of MDRD. This upscale Spanish restaurant is located in downtown Grand Rapids, Michigan. Brigham, a Michigan native, will lead MDRD’s food and beverage menus. The restaurant is on the 27th floor of the Amway Grand Plaza’s glass tower, which was renovated recently. It became part of the hotel’s seven dining outlets in 2020.

Brigham started her culinary career in Tucson with Fox Restaurant Concepts. She then worked in Grand Rapids’ culinary scene at The Gilmore Collection. Most recently, she was the executive chef of ROAM, a restaurant known for global street food. At MDRD, Brigham aims to offer new culinary experiences.

Adam Tanner, AHC Hospitality’s Vice President of Food and Beverage, commended Brigham’s appointment. He stated that her culinary vision, which blends innovation with Midwest tradition, will enhance MDRD. He also mentioned her leadership skills and fresh ideas as important contributions.
