Bliss Bakery shortens hours, sheds staff to stay afloat

HOLLANDBliss Bakery is restructuring to ensure it can remain open.

Owner Krista Koets took to social media this week, saying personal challenges and a slow-down in business after the holidays means the bakery will cut back on hours and launching a new business model.

Bliss first opened in Hamilton in 2021. The gluten-free eatery announced in January 2023 it would move to Holland, opening at 102 S. River Ave. in the former home of Saunders Family Bakery.

At the time, Koets planned to launch a gluten-free all-day brunch menu, in addition to 50 regular gluten and sugar-free baked goods and breads — plus a protein smoothie bar, an espresso bar and mocktails.

But the slow season is weighing on Koets, and tough decisions were made.

“I had to make a very hard choice when faced with the reality of my personal and professional financial situation,” Koets wrote on Facebook. “I have to restructure Bliss or close the doors. So, I’ve had the sad task of letting go (of) most of my wonderful team. I don’t think I’ve ever cried so much as I did yesterday.”
