WYOMING, Mich. (WOOD) — A new Grand Rapids-area food truck offers a unique spot where customers can eat their Cuban pizzas: a converted school bus.
Montejo’s Cookhouse has opened in Wyoming, primarily operating at 1540 28th St. SW near Burlingame Avenue. Owned by Jazmin Montejo and her husband, the food truck offers Cuban pizzas, personal pizzas with crispy cheese that are folded in half and eaten like a taco.
Alongside the traditional cheese pizza, there’s also pepperoni, Hawaiian, shrimp and Mexican toppings. It’s a recipe they spent months perfecting, Montejo said.

“We were eating pizzas for around a month or two months, every day at home,” she said with a laugh.
She and her husband would like to eventually expand the menu, offering more Cuban items like Cuban sandwiches and spaghetti…
