Restaurant chain MudPenny is expanding to Spring Lake this spring with its first location outside the Grand Rapids area and a bet that its broader dinner menu can draw both locals and Holiday Inn hotel guests.
The new restaurant, which will be the chain’s fourth location, is slated to open in early March on the ground floor of the hotel at 940 W. Savidge St., taking the place of Burger Theory that has operated in the space since 2018.
