Try these holiday brunch recipes

JAMESTOWN, N.C. (WGHP) — When friends and family visit this holiday season, serve them a special holiday brunch.

These are Cindy Farmer’s favorite holiday treat recipes

On this Recipe Wednesday, Shannon Smith shows us the perfect menu at Guilford Technical Community College’s Culinary School in Jamestown.

Breakfast Casserole

Ingredients:

  • 2 Eggs
  • 2 lbs. shredded potatoes
  • 1lb Bacon, Sausage or Ham, cooked
  • 1 Onion, sauteed
  • 1 Bell Pepper, sauteed
  • 1 cup of shredded cheddar cheese

Directions:

  1. Place potatoes on a greased sheet pan with butter, salt & pepper and bake until golden brown and let cool, then place in a greased casserole dish.
  2. Layer bacon over the top of potatoes.
  3. Then add Onions and Peppers
  4. Scramble the eggs till firm, and let cool before adding them to the pan
  5. Sprinkle cheese on top of the eggs
  6. Cover and bake at 350 degrees for 30 minutes or an hour if it is frozen

My Wife’s Famous Cinnamon Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup butter (softened)
  • 2 tablespoons cinnamon
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
