Several, not all, food ingredient storage containers, bottles, shakers, in the entire facility, not labeled with the common name of the food. Corrected on site. Observed hand-wash sink in the front area of the facility with brown staining from pouring coffee into this sink. Educated owner and manager and corrected on site. Observed the underside of the large mixer with accumulation of dried food debris with the possibility to contaminate foods being prepared below. Equipment is not used on a daily basis and should be covered in between uses. Several bins observed with food debris coming in contact with equipment/utensils stored inside. Corrected on site.
Sushi Awarsei In Karns Lemoyne, 1023 State St., Lemoyne, April 12. Fail. Ready-to-eat sushi was held at 50.9 °F, in the customer self-serve cold hold unit, rather than 41°F or below as required. The person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The person in charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Observed sliced ginger in the True two door upright cooler stored open with no covering. Observed raw eggs stored over ready-to-eat foods in the True two door upright cooling unit. Two employee’s beverage containers were observed in on a food shelf and over a preparation area. Employee foods must be separated from Sushi Restaurant foods and clearly identified as such. Employee coat observed store on shelving with foods for the sushi restaurant. Observed a large rectangular container of sticky rice left out overnight and not discarded four hours after prepared. Employee did not know the correct procedures for holding sticky rice. Educated, but not corrected on site. Observed food debris on the tracking, handles and lids of the preparation cooling unit. Boba labeling/sealing machine with dried syrups on the machine with the possibility to contaminate drinks being prepared. Observed numerous food items (commercially processed and food prepared in the food facility) in the two door True upright cooling unit and the under counter cooling unit, and being held for more than 24 hours, not dated marked with the date it was opened or made. Too numerous to count, food ingredient storage containers, in the the entire facility area, is not labeled with the common name of the food. The food facility does not maintain Food Employee Certification records as required. Food Handler Certification displayed is no longer an employee and new employee Food Handler Certification was not displayed. A no handled food dispensing utensil in uncooked rice, observed stored in the rice. Dispensing utensil must be cleaned daily and have a handle not touching the food in which it is stored. Temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the sushi cold hold display unit. Sushi is served raw or undercooked to the customer’s request; however, a written consumer advisory (on the menu, table tent, or placard) is not provided to the consumer. Old unused non-working baine marie unit in the prep/storage area, should be removed from food facility, or cleaned and organized to prevent contamination of foods. Observed the following on food contact surfaces: three knives stored inside the top of the sushi assembly area coming in contact with food debris inside of this unit. A very dirty vegetable peeler and two knives stored on a dirty rolling cart shelf. The rice cooker with water and rice not cleaned from the day before. Two stainless containers, with utensils stored inside, coming in contact with crumpled papers and food debris and in need of cleaning. Suzumo machine with dried food debris on the food contact portion cutting board. Observed a heavy accumulation of dried food debris on the underside of the paper towel dispenser coming in contact with cleaned hands while using paper towel dispenser. Paper towel dispenser empty at the handwash sink in the shushi area. Corrected on site. Observed hand-wash sink is clogged and slow draining and in need of repair…
