American Legion Post 109, 224 W. Main St., Mechanicsburg, complaint, Oct. 17. Fail. Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Observed baked potatoes wrapped in foil overnight in the walk-in cooler. Observed numerous foods in all cooling units in the kitchen area stored open and unprotected underneath dirty racks with potential for contamination. Observed food stored directly on the dirty floor in walk-in cooler underneath racks, rather than 6 inches off the floor as required. Observed numerous food items (commercially processed and food prepared in the food facility) in all cooling units, and being held for more than 24 hours, is not dated-marked. Mechanical warewashing equipment observed with buildup of filth and food residue and needs frequent cleaning. Observed microwave in prep area damaged/peeling on top interior surface and is no longer durable for normal use in the food facility. Observed open container of homemade hot sauce on table in prep area with accumulation of old, encrusted food residue. Observed cooking/cold holding equipment, in kitchen area, with an accumulation of dust, dirt, food residue, debris on nonfood contact surfaces. Observed cooking equipment in the kitchen area with encrusted grease and soil accumulation. Observed the following on nonfood contact surfaces: Floors in kitchen and walk-in cooler with accumulation of dirt/food debris and need cleaning. Racks above food prep area behind cooking line with accumulation of dust/grease and need cleaning.
