Person in charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this noncompliant inspection. Person in charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions. Owner observed in food prep area not wearing proper hair restraints, such as nets, hats, and beard covers. Observed raw eggs stored over milk in the small undercounter cooler corrected on site. Observed an unopened but expired gallon of 1% milk stored in the bain-marie; discarded. Observed several food items (chicken, cut pineapple, pepperoni) not date-marked; corrected on site.
