Miami Resident Wins National Fitness Challenge After Injury Setback
A Miami woman, Scarlett Espinoza, 38, has triumphed over a significant injury to win a national fitness challenge. Less than a year after breaking her ankle in three places, Espinoza not only recovered but also transformed her physique, earning her the top spot in a Life Time Fitness competition and a $10,000 prize.
Espinoza’s journey began with a handstand accident at home, leaving her ankle broken and her mobility severely limited. Inspired by her parents’ aging process and a desire for long-term health, she was determined to regain her strength and fitness.
After months of rehabilitation, Espinoza began a rigorous two-month training program with Life Time Fitness. The intense routine yielded remarkable results: a 14-pound weight loss, a 6-pound muscle gain, and a halving of her body fat percentage.
However, maintaining the competition’s demanding regimen proved unsustainable. Espinoza wisely transitioned to a more flexible plan, focusing on long-term habits rather than short-term restrictions.
Her current routine prioritizes strength training with a focus on progressive overload, gradually increasing the weight she lifts to continually challenge her muscles. While initially incorporating an hour of cardio daily, she found a more manageable approach with shorter, low-impact sessions combined with aiming for 8,000 steps a day. Crucially, she now includes a full rest day each week.
Espinoza’s dietary approach has also evolved. During the challenge, she adhered to a strict high-protein, high-fiber diet, cutting back on processed foods.
Recognizing the need for balance, she now allows herself treats and indulgences while maintaining her protein and fiber intake. A typical day might include Greek yogurt with berries for breakfast, a large salad with chicken for lunch, edamame for a snack, roasted vegetables and legumes for dinner, and a small dessert.
Espinoza’s story is a testament to resilience and the power of adapting a fitness plan to fit a sustainable lifestyle. “It’s crazy when I think back to where I was a year ago,” she reflects. “I’m still not 100% but it makes me so happy to feel my body getting stronger and moving better.”
