Beloved by plant-based diners all around the valley (and famously featured on Guy Fieri’s Diners, Drive-Ins, and Dives ), vegan deli NoButcher announced back in December that ownership has changed hands.
“Hi, Las Vegas vegan community! I’m Phillip Shia, the new owner of NoButcher,” read an Instagram post published by the brand on December 22, 2024. “NoButcher has become a cornerstone for plant-based living in Vegas, and I’m honored to continue its legacy. My goal is to create a space where everyone feels welcome, inspired, and excited about great food all while keeping the exceptional quality of food and service that NoButcher is known for.”
Shia is now continuing this work and the taking the brand to the next level, with a new location planned for Henderson. It’s opening at 2560 St. Rose Parkway, and hiring has already started.
“It’s much bigger—twice as big,” Shia told What Now on Friday. “It will have both indoor and outdoor seating; and right now I have a local artist designing a big mural for the space.”…
