The Hat to Dip into Vegas Market This Spring

The Hat is bringing its world-famous pastrami dip sandwiches to the Valley this spring. According to the Review Journal’s Neon blog, the new Southern California quick-service restaurant is expected to open at 6215 S. Rainbow Blvd. in Spring Valley.

Construction is underway, and The Hat website even has the location listed as opening in spring 2026.

What started as a roadside stand in Alhambra, California, in 1951 has grown into a booming phenomenon, all due to the brand’s famous pastrami dip sandwiches. The family-owned eatery is known for serving up huge portions and high-quality, thinly sliced meat.
