As part of the large renovation happening at Suncoast, we’ve been making it a point to explore more of the dining options inside the property—trying places we’ve walked past before, and hopefully finding our next hidden gem. That’s exactly how we ended up at Briggs Oyster Co.
To be fully transparent, we weren’t even supposed to be there. We were heading to 90 NINETY Bar at Suncoast, assuming they’d be open like most spots are during the week. Spoiler alert: they’re closed on Wednesdays. But lucky for us, right next door was Briggs—so we took it as a sign and made the pivot.
