SoCal Taco Favorite Chuy’s Lands First Nevada Outpost on St. Rose Parkway

Chuy’s Baja Grill, a Southern California Cali-Baja taco shop, has planted its first Nevada flag along the St. Rose Parkway corridor in Henderson. The beachy, casual spot began serving customers in March, then made it official with a weekend grand opening that drew a steady crowd.

As reported by the Las Vegas Review-Journal, Chuy’s treated the first 100 customers to a $10 gift card and a free taco during its opening-day festivities. The paper also noted that the grand-opening celebration ran from 10:30 a.m. to 8 p.m. on Saturday.

Beach-Style Tacos and a Full Menu

The Henderson outpost’s menu leans Baja, with tacos like grilled wild-caught mahi, pulled organic chicken with pico de gallo and slow-cooked grass-fed birria, plus four burritos, several sandwiches and a trio of burgers. The restaurant’s local ordering page lists soups, salads, guacamole, shrimp skewers and its signature baja sticks for dine-in and pickup orders, according to Toast.
