New Pinkerton’s Barbecue in former 59 Diner space is a love letter to old-school Houston

The retro neon sign announcing the new location of Pinkerton’s Barbecue, which opens Jan. 20, spells out all the usual suspects of Texas smoked meats: BEEF – PORK – LINKS.

It’s a throwback to a time before social media and even television when barbecue joints advertised on signs and billboards and in classified ads where every letter cost money and brevity proved economical. Instead of announcing the Texas trinity as “brisket, pork ribs and sausage,” it paid to keep it simple with as few letters as possible.

The sign reflects owner and pitmaster Grant Pinkerton’s vision for his third location after his original restaurant opened in 2016 on Airline Drive in Houston and a San Antonio outpost opened in 2021…
