The Houston Livestock Show and Rodeo always delivers a loaded food lineup of bold bites and sweet surprises. This year, the most creative dish isn’t even from the Lone Star State.
Of the flavorful crowd-favorite foods voted in this year’s Gold Buckle Foodie competition, that honor went to a newbie vendor hailing from the Midwest. True to its title, Richie’s Cheese Curd Tacos is known for their crunchy curd-centric concoctions. In its sophomore year at the Houston rodeo, the group expanded its menu with a Texas-twist on its fried funky fusion: a brisket cheese curd taco with cabbage slaw and barbecue aioli.
“We are always playing around with flavors and that’s kind of the fun that keeps it exciting. There’s nobody else that does cheese curd tacos,” owner Richie O’Neil told Chron. “We’re trying to branch out as much as we can to bring that culinary experience to everybody.”
