The restaurants housed in the University Student Union’s restaurants have now been reduced to rubble. However, after its reopening in 2028, it will be home to the following eateries:
- The Halal Shack
- The Habit
- El Pollo Loco
- Shake Smart
- Cassidy’s Corner Cafe
- The Coffee Bean and Tea Leaf
- EveryTable
- The Nugget
- Taco Bell
- bb.q Chicken
- Higher Taste – Plant-based
The decision to add these vendors, which offer vegan, paleo and Asian food options, came out of a meeting last month by the Board of Trustees for the University Student Union and Student Recreation and Wellness Center, which gave it final approval.
The UREC committee is temporarily overseeing activities surrounding food choices on campus.
