Clay County’s barbecue faithful can start loosening their belts again. Richard Wilkinson, the pitmaster behind the former Rich’s Smoke Ring BBQ food truck, is rolling back into business under a new banner: The Disgruntled Pig.
Same smoked staples, new name. Wilkinson plans to bring back the brisket, pulled pork, ribs and classic Southern sides that built his following, and he said he even tracked down the very truck he sold in 2022. The revived operation is still in the works, with Wilkinson aiming to be back on the road by April.
Wilkinson ran Rich’s Smoke Ring full time from 2018 through 2022 and kept the fires burning on the side with catering during his hiatus, he said. About a month ago, he “found the same exact food truck” he had sold, a twist of fate that helped spark the reboot, according to What Now…
