We know José R. Ralat as Texas Monthly’s Taco Editor, a man with one of the most enviable (and respected) palates in the Lone Star State. But when someone who’s made a career out of documenting the best tacos in Texas suddenly opens up about their favorite burgers, you better believe we’re paying attention. Also, this list was shared as a story on Instagram so it isn’t technically “official” but it still feels worth talking about.

Ralat recently shared his top three burger picks across Texas, and to our delight, El Paso made the list. Representing the Sun City is none other than Hamburgesas Lola, a beloved local food truck serving up juicy, flavorful Mexican-style burgers with the kind of flair and authenticity that makes your mouth water before you’ve even ordered. Known for its colorful aesthetic, perfect char, and generous toppings, Hamburgesas Lola is a standout. Not just in El Paso, but now, officially, across the state. Joining Lola on Ralat’s prestigious list are two other heavy-hitting burger joints from deep in the heart of Texas. First up is Ninfa’s in Houston, where the Fajita Burger has earned cult status. It’s a savory, grilled-to-perfection blend of Tex-Mex and burger culture, complete with tender fajita meat and all the fixings. It’s exactly the kind of hybrid creation that proves food in Texas plays by its own delicious rules.

Then there’s Rutledge Hamburgers in Brownsville, a no-frills burger shack that has been quietly slinging incredible burgers for decades. It’s a South Texas classic. All about simplicity, quality, and flavor without gimmicks. Ralat’s recognition of Rutledge is a nod to the power of timeless, old-school burger craftsmanship.
