Pepper Lunch Pushes Texas Growth With Experienced Franchisee

Japanese restaurant concept Pepper Lunch is following up on one multi-unit deal in Texas with another. The latest agreement, for 20 locations, is with the company Sizzling Hospitality and will be led by restaurant industry veteran Bobby Shaw.

Bobby Shaw has been on both sides of the franchise model, and knows what it takes to build a brand.

In high school, he began working at McDonald’s, and ended up staying with the company from 1984-2001, becoming an owner-operator in Kansas City before moving to the corporate side. Ready for a new challenge, Shaw then went on to Chipotle for 10 years, and helped grow the brand from 184 locations to 1,200.

The extensive background, which recently included a dual role of president and chief operating officer at Austin-based Freebirds World Burrito, led him to being brought in on an effort to expand Pepper Lunch in Texas.
