KISSIMMEE, FL — Hazel’s Cabo Rico, a new stationary food truck blending Cape Verdean and Puerto Rican flavors, is preparing to open November 14 at 5403 W. Irlo Bronson Memorial Hwy, Kissimmee, FL 34746.
Owner Keila Darosa told Business Debut the stationary food truck will be located inside Food Truck Haven, a popular park that hosts live bands, weekend events, and a flea market.
What to Expect
Hazel’s Cabo Rico will be among the first trucks that guests see when entering Food Truck Haven. The park offers ample seating, umbrellas for shade and rain, and entertainment throughout the week. Darosa said she designed the truck to make guests feel welcome and comfortable in all types of weather.
Menu and Vision
Darosa, who is Cape Verdean and was raised in a Puerto Rican household, said Hazel’s Cabo Rico combines both heritages into one concept. “I wanted to create something that gives people the flavors I grew up with while introducing Cape Verdean food to those who may not know it,” she told Business Debut.
Signature Cape Verdean dishes will include catupa, served with eggs and linguiça, and atun cu bife and grande bico — Cape Verdean-style tuna with chickpeas, potatoes, eggs, and rice. The menu will also feature Spanish-inspired offerings such as deep-fried rice balls stuffed with chimichurri steak and topped with a house-made sauce…
