When chef Peter Cooke moved to Lafayette from Brooklyn two years ago, he wasn’t immediately planning on opening a restaurant. Moving from New York City to Louisiana is a huge undertaking on its own, and the Michelin-recommended chef thought he’d take a breather from the restaurant industry following a busy few years.
