Have you ever had a muffuletta empanada?
I wasn’t sure what to envision at first. When Luciano Escudero of Empanada Guy in Lafayette asked if I wanted to try their latest special, I imagined all of the flavors of a muffuletta — Italian meats, cheese and olive salad — stuffed inside a classic empanada turnover. I thought it would be tasty, creative and an exercise in fusion cooking.
