Spoonbill Watering Hole is a downtown Lafayette dining institution that has had a few different lives — but through each iteration, creativity is the main order of the day.
Once upon a time, the vintage building served up Conoco gas. Tanner Dimmick remembers when it was The Filling Station, a place to grab Tex-Mex with the family and experience the atmosphere at the top of Jefferson Street, where churches, restaurants, coffee shots and music venues converge to create prime people-watching conditions.
“It was a place where me and my friends would come meet each other and have a little frozen margarita before we went out downtown and stuff.
