Spoonbill Watering Hole is a downtown Lafayette dining institution that has had a few different lives — but through each iteration, creativity is the main order of the day.

Once upon a time, the vintage building served up Conoco gas. Tanner Dimmick remembers when it was The Filling Station, a place to grab Tex-Mex with the family and experience the atmosphere at the top of Jefferson Street, where churches, restaurants, coffee shots and music venues converge to create prime people-watching conditions.

“It was a place where me and my friends would come meet each other and have a little frozen margarita before we went out downtown and stuff. But I never actually went inside the building until we took it over,” said Dimmick, who is Spoonbill’s general manager and helped create the the restaurant’s bar program, which specializes in cocktails, tiki drinks and zero-proof beverages…
