People Rearrange Their Whole Saturday For The Pancakes At This Plain Little Nebraska Restaurant

Some mornings you just want pancakes, and you end up driving farther than you planned to get them. That happened to me on a Nebraska Saturday, when a red building with checkered trim turned out to be the whole reason a parking lot was full before 8 a.m.

Inside was wood paneling, racing flags, and a griddle working overtime. The pancakes came out the size of dinner plates, studded with fresh blueberries, and the rest of the day suddenly felt negotiable.

Drive along South Street in Lincoln and the building announces itself before any sign does: bright red walls, checkered trim, a hand-painted preview of blueberry pancakes near the door. Tina’s Cafe & Catering sits at 616 South St, a short hop off the main routes through the capital city.

It’s a small restaurant with a small lot, and that lot fills fast. There’s extra parking around the back, which regulars figure out on their second visit…
