UNADILLA, Neb. (KOLN) – In Unadilla, you’ll find the meat market called MK Meats, where owner Tom Hruby enjoys providing products from the farm to the table. We paid a visit to the store to get an update on the business. We visited MK Meats in 2019 when owners had just built their new facility. This business venture all started for Hruby when he was working at Hy-Vee in 1995. He met his wife there, and then saw an ad in the paper for a meat locker for sale in Unadilla. “I decided to buy the business,” Hruby said. “It was old, but I enjoyed it. We worked in the plant for 20 years. Over the years, I’d have someone bring in one hog or one beef to feed their family. But people started to really like getting food from the farm. But instead of someone bringing one beef or three, they started bringing more like 20 a year. That started growing our business to the point where we decided we needed to expand or walk away. We decided to build this new facility. Then COVID hit. Big plants were shutting down. People turned to lockers of our size, and we were booked solid for two years. That has relaxed a bit, but we are finding that people who came then realized the beef was good, they liked the idea of where their meat came from, and they continue to come back.”
