LUBBOCK, Texas (KCBD) – Ramen, pizza and tacos on the low performer list this week, with one top performer inside United Supermarket.
Yanagi Ramen at 11430 Quaker Ave. had 15 violations.
- Soup was being held in large pots that were not cooling quick enough. This can cause bacteria growth.
- Raw fish used to make sushi was above the safe cold temperature of 41°. Cut cabbage was not cold enough.
- A sanitizing solution was not strong enough.
- A toxic item was not properly labeled.
- A manager washed a spray bottle in the hand sink. Hand sinks are for handwashing only to prevent cross-contamination.
- Utensils were damaged. They must be kept in good Repair.
The inspector notes, due to the number and the nature of the violations a lack of managerial control was demonstrated.

- Nonfood-contact surface of the ice machine deflector plate was soiled with a buildup of black debris.
- Vent on the ice machine was visibly soiled with a buildup of greasy debris.
