Food for Thought: Complaint leads to inspection of this week’s low performer

LUBBOCK, Texas (KCBD) – A complaint to the Lubbock Health Department led to an inspection that landed a popular restaurant at the bottom of the list.

Buffalo Wild Wings at 7638 82nd had 28 violations.

  • There was a brown liquid spilled on the ice inside the ice bin near the soda machine.
  • A freshly washed meat slicer and blender cup were dirty.
  • Plastic sauce bowls and tongs were dirty.
  • Multiple staff members came into the kitchen from outside and did not wash their hands before starting food service.
  • Toxic items were not stored correctly.
  • The mop sink was not equipped with the proper backflow prevention device.
  • Cutting boards, a plastic ice scoop and citrus squeezers we’re damaged. They must be kept in good repair.

The inspector notes, due to the Number and then each of the violations food safety knowledge was not demonstrated.

  • Kitchen back door had a visible gap on the bottom of the door when fully closed.
  • Food prep employee with beard did not have an beard guard.
  • Visibly soiled, and wet wiping towels were stored on the prep tables between uses. No sanitizer buckets were available.
  • Containers of frozen chicken products, and black bean burgers stored in the walk-in freezer were not covered.
  • West hand sink in the bar is not sealed to the wall.
  • Blue plastic ice scoop was stored on the top bare surface of the ice machine bin between uses.
  • Single-service paper cone cups were stored uncovered on soiled bare shelf surface in the bar area.
  • Three plastic ice dispensing buckets were stored on the floor in front of the ice machine.
  • Boxes containing single-service to-go food boxes were stored on the floor. PIC states they arrived longer than 24 hours before.
  • Single-service paper food boats are being used, and reused multiple times to drain food after frying, and before serving.
  • Cardboard to-go food containers are being reused to store open bags of food sauces in the prep area.
  • Hand sink on the west wall of the bar was visibly soiled.
  • White sauce bowls that are clean had multiple stickers, and gray tape on the nonfood contact surfaces not removed at ware wash.
  • Personal drinks stored in a designated wall shelf were stored above the hand sink in the kitchen area.
  • Personal items (keys) stored on top of a food service microwave on the prep table.

The report shows most of the violations were corrected at the time of the inspection…
