LUBBOCK, Texas — A new business based out of Lubbock, Heartland Bakes, making homemade bierocks known as a traditional dish that resembles a “meat pocket.” The owner of the business, Stacy Mahan, felt she was always called to serve the community, so she began making them out of her kitchen and then out of the Culinary Co-Op located on 5400 Frankford.
Stacy Mahan has demonstrated her calling to serve by partnering up with Mano Negra, First Friday Art Trail and the Wolfforth Farmers Market. Only beginning to making the Bierocks at the end of September, she is grateful for how the community has opened their arms in welcoming her.
What motivates her to step in the kitchen, roll up her sleeves and start making dough is knowing how she was given the ability to feed those around her. After making a large batch for an event, if there are leftovers, she donates them to Ronald McDonald House or to the homeless here in Lubbock…
