Remembering the man behind Mama Josies restaurant

LUBBOCK, Texas— Inside the walls of any Mama Josie’s restaurant, thousands of meals are served every day. The man behind all of this being possible is Frank Castaneda Sr., and his restaurant was never just about food. Javier Castenda is one of Frank’s sons and said his father wasn’t always in the restaurant business.

He spent several years as a welder and pipefitter before sacrificing his work to help his wife pursue a dream of turning her small burrito operation into a Lubbock staple.

“Every time he would move to a new place, my mom would send him burritos that he could eat during his breaks…he sold them here and there, and it would just kind of buildup people wanted more…”Javier said.

Before sunrise, Javier said his dad was already working. He would set up equipment, prep food, and would do whatever was needed to keep the business going and growing…
