When Kaj Myklatun opened a food truck, called Pota Madre, in his home country of Norway in 2024, he could only dream of one day expanding to seven locations — including one, most recently, in the United States.
Myklatun’s dream became a reality when Madison resident Pernille Zander tried Pota Madre’s food while visiting family and honeymooning in Norway with her husband, Travis, in May of this year.
