Behind the scenes of Settle Down Tavern’s pickle program

Before the magic can begin in Settle Down Tavern’s prep kitchen, “The Oracle of the Pickle” must arrive. That’s what restaurant co-owner Ryan Huber calls prep manager David Turley — the man behind Settle Down Tavern’s pickle program.

In their own section of the menu, Settle Down’s pickled offerings are listed around a drawing of “David the Pickle Man,” who’s caricatured as a pickled cucumber with square frame glasses, a newsboy cap and saddle shoes.

“We’ve always had burger pickles and other pickled things on the menu,” says Huber, “but [Turley brings] his whimsical and highly nuanced approach to the program.”…
