Bri’s Fresh Bakes opens a storefront in Sun Prairie

Bri’s Fresh Bakes is opening a storefront this weekend in Sun Prairie at 1225 W. Main St. The grand opening is slated for March 28 from 8:30 a.m.-2 p.m., or until sold out. Following the event, the bakery will be open for regular hours Thursdays to Saturdays.

Owner Bri Simler says she didn’t plan on turning her bakery into a brick-and-mortar business. Bri’s Fresh Bakes has been a popular vendor at the Sun Prairie Farmers’ Market for the past five years. In 2025, it was awarded a Best of Sun Prairie nod.

“As Bri’s Fresh Bakes continued to grow, it just made sense,” she says. “Our amazing customer base really gave me the confidence to take the leap and having our own space allows us to offer our baked goods more consistently.”

The bakery sells pastries, breads and cookies, and the open-concept kitchen will allow customers to see the behind-the-scenes of the baking process. Other staple items include a croissant-muffin hybrid called a “cruffin” — which comes filled with Nutella, cream or fruit — and a pistachio croissant that Simler notes is a fan-favorite. Along with her classics, Simler says there will be rotating seasonal items on the menu, starting with spring flavors like a spinach ricotta croissant and a lemon poppy seed scone…
