There’s a tiny, unassuming little spot in the Arizona desert where time doesn’t just slow down-it does a full-on faceplant into a plate of carne seca and handmade tortillas.

Chino Bandido isn’t on every tourist map (good), it doesn’t have Wi-Fi (better), and yes, the lunch special hasn’t changed since roughly the era of flip phones (best).

And I love it for that. As someone who once ordered “whatever’s hot” and got a mystery stew served with a wink and a side of pickled jalapeños, I can tell you this: some traditions shouldn’t be fixed…
