Luna Grill is making a play for one of Gilbert’s busiest corners, with plans to slide into the former Teriyaki Madness space at SanTan Village, right by Costco and Menchie’s. The address is listed as 3131 S Market Street, and while the Mediterranean chain has yet to announce when the grills fire up, the move tracks with its broader push into the Valley following its Arizona debut in Mesa last November.

According to WhatNow, a tip on The Valley Radar’s Instagram first pointed to the SanTan Village suite as Luna Grill’s next stop. WhatNow also noted that there is still no official opening timeline on the books.

SanTan Village is an open-air shopping and dining hub stacked with national retailers and anchored by a Costco, which puts the future Luna Grill right in the path of regular errand runs and weekend crowds. EastValleyNow reported that Luna will take over the former Teriyaki Madness suite next to Menchie’s, and recent leasing movement points to a straightforward tenant build-out instead of a major construction project.

Why Luna Is Expanding Here

In a company news release tied to its East Valley debut, Luna Grill said its Mesa restaurant, which opened Nov. 11, 2025, became the brand’s 54th location and “the first step in a larger Arizona expansion planned for 2026 and beyond.” The company framed Arizona as one of its most-requested markets and outlined a neighborhood-focused growth strategy across the state, with Gilbert next in line.

What To Expect

The Gilbert spot is slated to bring Luna’s standard fast-casual Mediterranean lineup: flame-grilled kabobs, bowls, salads, fresh pitas and family meals. In that same company announcement, CMO Billy Grenham said, “Arizona has been our number one most-requested market,” a hint at why the chain is wasting little time moving from Mesa into Gilbert. The Mesa opening came with loyalty-app deals and veteran-specific promotions, so it is reasonable to expect a similar round of opening-week offers and Club Luna perks once the SanTan Village doors open.
