Sushi by Bou, the modern omakase concept known for its reimagined sushi counter experience, is set to open its first Arizona location at The Westin Tempe in early May. The debut marks the brand’s entry into the state and its continued expansion across the Western United States, bringing its signature chef-driven dining format to Downtown Tempe.
Sushi by Bou at The Westin Tempe introduces a 60-minute, 12-course omakase experience designed to deliver high-quality sushi in an efficient, approachable format. Guests are seated at an intimate chef’s counter where each course is prepared and served piece by piece. The experience highlights premium fish, traditional Edomae techniques, and a curated progression of bites that emphasize both craftsmanship and seasonality.
The concept has gained traction in major dining markets including New York City, South Florida, Nashville, Chicago, and, recently, Utah, where Sushi by Bou has built a reputation for offering elevated omakase in a more accessible and energetic setting. The Tempe opening reflects the brand’s strategy to expand into growing culinary destinations while maintaining its focus on quality and hospitality.
“We’re excited to introduce Sushi by Bou to Arizona and continue expanding westward,” says Erika London, CEO of Sushi by Bou, in a press release. “Tempe has an incredible dining culture and energy, embracing the rise of atmospheric dining, where the experience is just as intentional as the menu itself. Opening inside The Westin Tempe allows us to bring our signature omakase and immersive experience to a vibrant new dining scene.”…
