The Bartolotta Restaurants will expand its Milwaukee dining portfolio with the opening of High Stakes by Bartolotta on Thursday, Sept. 17. The new Downtown Milwaukee restaurant will pair a European-inspired steakhouse menu from two-time James Beard Award winner Chef Paul Bartolotta with interiors influenced by classic London lounges and private social clubs. The adjoining Peacock Lounge will debut the same day as a destination for cocktails and lighter fare before and after dinner.
Paul Bartolotta Returns to the Kitchen
High Stakes by Bartolotta marks a return to the kitchen for Bartolotta, who developed the inaugural menu alongside Director of Culinary Aaron Bickham, Chef de Cuisine Ian Jones, and the restaurant group’s culinary team.
“High Stakes by Bartolotta represents a new chapter in the evolution of The Bartolotta Restaurants and it has afforded me the opportunity to return to the kitchen to work alongside Director of Culinary for The Bartolotta Restaurants Aaron Bickham, as well as Chef de Cuisine for High Stakes by Bartolotta Ian Jones, and the entire culinary support team to collaborate on this menu,” Bartolotta says, in a press release.
The menu builds on the corn-fed Black Angus beef program found throughout several Bartolotta restaurants while expanding into premium beef, seafood, shellfish, and caviar. A caviar program developed with French caviar house Kaviari includes Kaviari Osciètre Prestige Caviar and potato coins topped with caviar and chive blossoms.
