Centro’s new restaurant is a tribute to fishing culture

If fishing rods and waders are a combo that makes you hungry, Centro has some news for you that was thiiiiiis big [stretches arms out as far as they go].

Centro Restaurant Group, the folks behind restaurant concepts like Centro, Hippo Pockets, and Bina’s Bar, has announced plans to open Bill’s Bait Shop, a culinary homage to Minnesota’s fishing culture.

It’ll take up residence in the former home of Chicago’s Taste Authority at 3101 42nd St. in south Minneapolis. The 2,200-square-foot space is a tribute to Centro owner Jami Olson’s grandfather, Bill, who, as the name suggests, loved fishing up north.

The restaurant’s menu is being crafted by Max Thompson, with more than a slight nod toward hearty fare that will evoke supper clubs, hearty cabin dinners, and quick bites before fishing trips.

Items teased as part of the launch menu include a smoked whole chicken, burgers, oysters, smoked trout dip, tinned fish, bagel sandwiches, walleye po’boy, fried fish sandwiches, and, as a nod to the building’s former resident, a hot dog…
