The “fais do-do,” or the Cajun-inspired cookout among friends spread out across 10 tents, featured a crawfish boil while another person cooked jambalaya in a large cast-iron skillet. The same group had just finished serving breakfast tacos and cinnamon rolls, all of which they prepared on site.
These fais do-do friends arrived at the steeplechase grounds in Percy Warner Park an hour before the gates opened at 8 a.m. to have enough time to set up their operation, which they’ve been doing for years. As they invited random passersby to lunch a little later when the crawfish finished boiling, they were setting up dozens of bottles of bourbon…
