North Italia serves hand-tossed pizzas and homemade pasta made every day in the area. According to the report, the violations recorded were as follows:
- An employee with a cut on his left thumb was seen cutting Brussels sprouts while wearing a blue bandage, but no gloves. The employee washed their hands, put on gloves, and the sprouts were discarded.
- The report noted that an employee was handling dirty dishes and then handling clean dishes without washing their hands. The issue was discussed, and the employee washed her hands immediately.
- The high-temperature dish machine final rinse was observed at 154°F, which is below the required temperature. The machine was serviced, and the water was changed.
- The report mentioned that the marinara sauce held in a steam unit for 45 minutes measured 89°F. Meatballs was held in the same unit for 45 minutes measured 85°F. Both items were reheated on the stove to a minimum internal temperature of 165°F.
- Employee drinks were seen not stored in cups with lids and straws, and one beverage was stored on the make line with food products.
