Popular New Orleans brunch spot prepares for Lafayette opening with jazzy menu

If you have a craving for French toast bites that taste like fluffy, syrupy little bites of heaven, you’re in luck.

Ruby Slipper, the family-owned, New Orleans-style brunch spot known for bread pudding pancakes and other decadent breakfast creations, is on track for an opening date of Tuesday, Jan. 21 at 4701 Ambassador Caffery Pkwy., Lafayette.

The restaurant is known for its community-first spirit, and fun twists on classic Louisiana- and New Orleans-style brunch plates. Along with bananas foster French toast and cinnamon swirl pancakes on the sweeter side of the menu, the eatery has an extensive eggs Benedict list with options like the Chicken St. Charles — fried chicken on a Ruby buttermilk biscuit, topped with poached eggs and a delicious tasso cream sauce.

Here’s something to help out indecisive diners: When you order “The Peacemaker” you can choose from any two Benedicts on the menu, meaning there’s no need to decide between tasty options like the Bayou Shrimp, or the Eggs Blackstone (which features applewood-smoked bacon and grilled tomatoes). If you’re really torn, The Trifecta comes with Ruby’s signature Benedicts — the Eggs Cochon, Chicken St. Charles and Bayou Shrimp.

The egg and omelet section gets even more flavorful, with entrees like the signature Costa Rican Breakfast — two eggs your way, with spicy chorizo, black beans and rice, salsa, avocado and perfectly fried strips of plantain bringing everything together…
