Healthy Loaded Cauliflower Casserole Recipe

Ingredients:

  • 2 medium heads of cauliflower, cut into bite-sized florets
  • 6 slices of bacon, cooked and crumbled
  • 1 cup of shredded Cheddar cheese
  • 1 cup of shredded Pepper Jack cheese
  • 6 ounces of cream cheese, softened
  • ⅔ cup of sour cream
  • 1 teaspoon of garlic powder
  • ½ teaspoon of onion powder
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish)

Instructions:

  1. Preheat your oven to 425°F (220°C). Grease a 9×13-inch baking dish.
  2. Cook the cauliflower: Steam the cauliflower florets until tender, about 10-15 minutes. Drain well and set aside.
  3. Prepare the cheese mixture: In a large bowl, combine the cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth. Stir in half of the Cheddar cheese and half of the Pepper Jack cheese.
  4. Assemble the casserole: Add the steamed cauliflower to the cheese mixture and stir until well-coated. Transfer the mixture to the prepared baking dish. Sprinkle the remaining Cheddar and Pepper Jack cheese over the top.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Add the bacon: Remove the casserole from the oven and sprinkle the crumbled bacon over the top. Return to the oven and bake for an additional 5 minutes.
  7. Garnish and serve: Let the casserole cool for a few minutes before serving. Garnish with chopped chives and enjoy!
